The old article was a particular favorite of mine, so I was ecstatic several months ago when I was able to crit the rewrite. And it is still amazing! There are some things you could improve, like pH being written as PH, but the majority of the article is really good. You expanded on a simple joke premise and made it into a well thought out, well written, well explained article that has a clear theme but doesn't repeat everything.
